After making my vegetable stuffed pumpkin I couldn’t even think of throwing away the pumpkin seeds! They are way to precious! Not only are they delicious, but pumpkin seeds are packed full of nutrients including magnesium, iron, zinc and protein just to name a few. There are so many different seasonings you can put on your pumpkin seeds, but I decided to do a ranch seasoning. Here is how to get started.
What you will need:
- Pumpkin seeds from a cleaned-out pumpkin
- 1 Tablespoon Salt
- 1 Tablespoon Olive oil
- Ranch Seasoning
- 2 Tablespoons dried parsley
- 1 Tablespoon dried chives
- 2 Teaspoons garlic powder
- 2 Teaspoons onion powder
- 1 Teaspoon dried dill
- 1 Teaspoon kosher salt
- 1 Teaspoon ground black pepper
Preheat oven to 300 degrees F. To prepare the pumpkin seeds, thoroughly clean all pumpkin guts from the seeds. In a colander, rinse the seeds thoroughly. Place pumpkin seeds in about 2 cup of water with 1 tablespoon of salt. Let sit for about a half hour. Drain the water from the pumpkin seeds and place them on towels to dry. Once they have dried, toss pumpkin seeds with olive oil and ranch seasoning. The amount of seasoning you use will depend on how much you like ranch and how much you want on there. Whatever you have left over reserve for a later use. Place seeds on a parchment or foil lined baking sheet. Make sure they are spread out enough that they aren’t over lapping too much. Bake for 30-35 minutes until crispy.
